Millesimato is Parmigiano Reggiano made with the best milk of our beef. The best milk is that of the animals that have been born for a few days, at most 100. The milk of newborn mothers is much nutritious, because it is concentrated in protein. Once curdled, it spontaneously gives away the water it contains, making it particularly suitable for the production of hard cheese.
